Thornless blackberries are sour? - thornless blackberry sour

I have a BlackBerry without a thorn in my garden, lots of fruit, but acids.
Can someone help me, why are bitter?

It is not mature enough, but probably only have the variety of fruit. Some varieties are naturally sweeter than others and some are sour. Some people seem to like more sour.

I take blackberries every year in Washington. Thornless blackberries have less flavor than mature. Blackberries are full of flavor - sweet and bitter. The thorns are soft.

Not at all, but probably not only at the end of the term.

Said the usually prefer to go select our blackberries, before full maturity. We prefer a little soft / sweet.
